In 1988, Paul "Aussom Aussie" Mackay crossed the Pacific to prove that Australian BBQ could compete — and win — at the toughest contests in the world. Armed with secret rubs, a championship sauce, and an Aussie attitude, he entered the American BBQ circuit and never looked back.
Over 38 years and 450+ awards later, Aussom Aussie BBQ has become one of the most decorated competition teams in North America. From the Great American Rib Cook-Off to the Nugget Best of the West, from Chicago Ribfest to Fargo — the trophies keep coming.
Paul has appeared on the Food Network, Travel Channel, CBS, Fox, NBC affiliates, and local TV news across the country. He holds a hospitality degree from Australia, ran restaurant and catering operations, and served as Assistant Director of Food & Beverage for Hilton Hotels.
Today, the team competes in 10–12 national ribfests per year — and brings that same award-winning experience to private events and corporate catering in the Reno/Tahoe area.
